My experiment with vegan/raw foods for the last two weeks has taught me that you can make *anything* delicious if you have enough fresh produce around the house. I've actually been basically eating vegan/raw breakfast & lunch for the most part of the last two weeks, and I can't deny that I feel really great and alert!

This afternoon, I thought..."ugh, a salad wrap?!"

Then I started putting the things on the counter I was going to put in the salad - avocado, macadamia nuts, fresh parsley, fancy sea salt & olive oil...and I got really excited about building on top of my kale/spinach/arugala/beet/carrot "pulp" (leftover from morning juicing) salad.

I missed my typical morning yogurt/fruit/raw granola goodness, so I made an extra lunch dessert of a dried pineapple ring, half a grapefruit, and blackberries. Really, it's all about having a variety of fresh produce.

Also, don't get me wrong. I'm eating vegan for breakfast & lunch (for the most part), but there's some meat/eggs that are slipping in here and there, and I don't really care at this point. Once I've built up enough knowledge of how to prepare vegan/raw foods, I might become more of a stickler, but for the time being, I'm happy with adding in all these goodies!

And honestly, my grocery bill looks so much better these last couple of weeks than it did when I purchased all that "pre-made" stuff.
