My New Year's Resolution was to learn how to cook...and learn how to cook I will!

Approximately every other Sunday, I get together with an amazing cook to learn techniques and recipes for becoming a more self-sufficient foodie. So far, the most simple & amazing thing I've learned how to do is ROAST veggies! Holy smokes...you should see our meals these days - so many more greens and delicious veggies.

I'm definitely a carb-lover, so the idea of voluntarily eatting vegetables has always been sort of suspect to me, which isn't good, considering I also don't really eat meat...or processed foods...or stuff with preservatives...so I'm kinda a picky eatter, I guess!

Anyways, I'm diggin' on the roasted veggies. I even had some roasted sweet potatos at a restaurant yesterday and thought, "I could make these!" And earlier in the week, while grocery shopping, I picked up one of those foodie magazines and, flipping through the pages, realized there were several things in there that I could probably make.

As someone who doesn't like to set goals that I can't accomplish, I'm always very realistic about my goals...so I don't try to say that every day I'm going to make something new - rather, this week, I'm going to try three new recipes - 2 baked goods (yum!) and a savory dinner entre.

Currently in the oven: PB&J bars

Later this week: Chocolate meringues (for my love)

Thursday night: Orange-ginger scallops

I'm really liking cooking - I feel like part of what I was/am missing is confidence to really be a good cook, but I'm overcoming it! In contrast to the last three years in which I had a steady, laser-pointed focus on burlesque, I think 2011 will be a year in which I diversify and maybe focus on the things that make me feel happy to be alive, like food, love, and free time! :)
